MUFFINS

Makes 12

Ingredients

Vegetable oil for greasing

125g butter melted and cooled

200g caster sugar

3 medium eggs

130ml buttermilk

400g plain flour

1 tsp baking powder

1 tsp bicarbonate of soda

12 tbsp jam or chocolate hazelnut spread

To coat

3 tbsp caster sugar

A pinch of ground cinnamon

 

Method

-          Preheat the oven to 180C/Gas4; lightly brush a 12-hole muffin tin with oil; put all the Muffin ingredients – except the jam or chocolate spread – into a large mixing bowl and beat until smooth

-          Add about 2 spoonfuls of the mixture into each muffin hole, leaving the rest of the mixture for the top; make a dip in the centre of each muffin with a teaspoon, but take care not to go too deep or the jam will come out of the bottom; add a rounded tablespoon of jam or chocolate spread to each one; top with a little more cake mixture and spread it out to make sure that the filling is covered

-          Bake for 20-25 minutes until risen, golden and just firm to the touch

-          Mix the sugar with the cinnamon and spread out on a plate, let the cooked muffins rest in the tin for a few minutes before removing them and while still warm, roll them gently in the sugar mixture to coat; leave to cool on a wire rack – don’t eat them straight from the oven as the jam will be very hot

-          Poggi madwar 2 imgharef mit-tahlita f’kull hofra tat-turtira u halli l-kumplament tat-tahlita ghal wicc; ghamel ghafsa fin-nofs ta’kull muffin b’kuccarina, izda tinzilx wisq l-isfel ghax inkella l-jam johrog minn taht; zid mgharfa jam jew cikkulata fuq kull wahda; poggi fil-wicc ta’kull wahda ftit mit-tahlita tal-cake u ifrixa sew biex tkun zgur li l-mili jkun mghotti

-          Sajjar fil-forn ghal 20-25 minuta sakemm joghlew, jihmaru u ma jkunux rotob meta tmisshom

-          Hallat iz-zokkor mat-trab tal-kanella u poggih fi platt; halli l-muffins misjura joqghodu ftit fit-turtira qabel ma’tohroghom; meta jkunu ghadhom shan gerbibhom bil-mod fit-tahlita taz-zokkor; hallihom jikshu fuq rack tal-wire – tikolhomx meta jkunu ghadhom kemm hargu mill-forn ghaliex il-jam ikun jahraq hafna
